Here’s an easy recipe created by Alexandra Steele, 9, who has expanded her cooking talents to include the artistic, nutritious creation of salads. “Alexandra’s salad was created the day that her grandmother gave her a fresh watermelon,” said her mother Brianna. “It’s rich in nutrients and contains fruits, vegetables, grains, protein, and dairy. Watermelon is in season and one of the most refreshing fruits around, so this is an ideal recipe for Mother’s Day and Memorial Day picnics.

Alexandra’s Refreshing Watermelon Salad

Makes: 4 Servings

Ingredients

1 cup fresh spring greens
1 cup fresh cilantro
1 cup fresh watermelon, cubed
1/2 cup red grapes, halved
1/4 cup walnuts, chopped
1/4 cup Feta cheese
4 whole-­grain dinner rolls
2 teaspoons butter

In a large salad bowl, mix all ingredients together. Arrange the salad mixture on a platter and serve with whole-­grain dinner rolls spread with grass-fed butter, if possible. ENJOY!!!

Simple Fish Tacos

Makes: 6 servings

Seasoned chunks of cod topped with fresh diced tomatoes, shredded cabbage, a squeeze of lime, and a dollop of cilantro-infused sour cream are all served on top of a warm corn tortilla. These fish tacos are the perfect combination of simplicity and excitement; perfect for Cinco de Mayo or anytime.

Ingredients

1/2 cup sour cream (low fat or fat-free)
1/4 cup mayonnaise (low fat or fat-free)
1/2 cup fresh cilantro (chopped)
1/2 package taco seasoning (package low-sodium, divided)
1 pound cod or white fish fillets (cut into 1 inch pieces)
1 tablespoon olive oil
2 tablespoons lemon juice
2 cups red and green cabbage (shredded)
2 cups tomato (diced)
12 corn tortillas (6-inch, warmed)
lime wedges (for serving)

Directions

  1. In a small bowl, combine sour cream, mayonnaise, cilantro, and 2 Tbsp seasoning mix.
  2. In a medium bowl, combine cod, vegetable oil, lemon juice, and remaining seasoning mix; pour into large skillet. Cook stirring constantly, over medium-high heat for 4-5 minutes or until cod flakes easily when tested with a fork.
  3. Fill warm tortillas with fish mixture.
  4. Top with cabbage, tomato, sour cream mixture, lime wedges, and taco sauce.
