3 Easy, Tasty Recipes You Can Make This Spring

Are you looking for simple, fresh recipes to make this spring? Springtime is a great way to incorporate fresh fruits and vegetables back into your diet. With a variety of fresh produce readily available, spring is a great time to get your dose of vitamins and minerals. These easy recipes are sure to satisfy you and your guests: 

Breathe Life Into Breakfast

Breakfast is one meal that is easy to make repetitive… and boring: eggs, bacon, and toast can only be exciting for so long. Avocado toast is a breakfast trend that’s grown within recent years as a punchline for Millennial generation jokes. This avocado toast recipe is one I live by weekly. It uses a minimal amount of dishes and is nutritious and savory with a variety of ways to jazz it up day-to-day: 

  • 1 avocado, size of your choosing 
  • 1 slice of toast, done to your liking 
  • 1 fried egg (best if cooked sunny-side-up) 
  • 1 teaspoon of garlic powder 
  • Salt and pepper to taste 

Start by mashing your halved avocado. Take a fork and begin by raking the avocado flesh in the skin until mushy. Add your garlic powder, salt, and pepper to the avocado and combine. Plate your toast and spread avocado mash onto toast with the same fork. Lay fried egg on top of avocado mash. Enjoy with a fork!  

BONUS: Add microgreens, sunflower seeds, or shredded cheese of your choosing if you’re looking for maximum flavor!

More Than Your Ordinary Wrap 

Are you tired of sandwiches for lunch? Wraps are a great alternative to the mundane sandwich. These springy wraps inspired by The Recipe Critic are a great way to explore flavor combinations and get your vitamins and minerals into your diet: 

  • 1 package of spinach tortilla wraps 
  • 2-3 cooked, sliced chicken breasts 
  • One bag of fresh spinach (or spring mix) 
  • 1 cup sliced fresh strawberries 
  • 2 cups shredded carrots 
  • 1 cup chopped walnuts 
  • Feta cheese 
  • Balsamic dressing 

Lay your spinach wrap flat on the counter and begin by placing a few strips of chicken breast for the bottom layer. Top the chicken with spinach (or whatever leafy ingredient you choose). Sprinkle your desired amount of strawberries as the next layer, and your shredded carrots on top of that. Finish it off with walnuts and feta cheese crumbles followed by a balsamic dressing drizzle. Tuck and roll your wrap away from you, tucking in the ends as you roll. Cut in half and serve with any additional fruits or veggies you may want.

A Berry Delightful Pick-Me-Up 

Not into keeping fresh produce on-hand? No worries, this refreshing smoothie actually prefers frozen fruit (you can always garnish with fresh fruit, if desired) in order to keep the consistency thick and the temperature chilly. This is another customizable recipe, right down to the type of ice you want to use. Exercise your artistic liberty and enjoy this healthy smoothie in the spring sunshine: 

  • 2 cups oat milk 
  • 1 cup vanilla Greek yogurt 
  • 2 cups frozen berry mix 
  • 2 tablespoons honey (preferably local if you can find it) 
  • 1 teaspoon vanilla or almond extract 
  • 1 to 1 ½ cups of ice 

Measure, pour, and blend all ingredients until your desired consistency. Garnish with fresh mint or fruit and your favorite type of straw. Sip away!
